Here’s my secret recipe for Key Lime Pie. Unfortunately the secret ingredient is for it to be made by someone from the Florida Keys, so you’re just gonna have to settle for this version:
For the crust:
1/3 Cup of Brown Sugar
1/3 Cup Melted Butter
18 Graham Crackers (that’s probably like 1.5 cups but I like to get weirdly specific in my recipes)
For the pie:
2 Egg Yolks
2 Teaspoons of grated lime zest (Honestly this is a skippable step. It just makes people think you know what you’re doing)
1 Can of 14oz Sweetened Condensed Milk
1/2 Cup of Key Lime Juice. This is important. Don’t use regular limes, I can’t have you making this and telling people where you got the recipe when all you’ve done is make a dumb old lime pie. You can use Persian Limes or use ‘Nellie & Joe's Famous Key West Lime Juice’ (this is what I use).
Preheat your oven to 350°
For the crust use a food processor and combine the graham crackers, brown sugar and melted butter. You want it to feel like wet sand. Sprinkle in some (not a lot) sea salt if you want to get fancy.
Dump this mixture into a 9 inch pie pan and press with your hands or a spoon if you’re fussy.
Bake for 5-10 minutes. Don’t burn it. Just enough for it to start smelling good.
For the filling beat the two egg yolks just a little bit and add the sweetened condensed milk, key lime juice and the zest. If you’re doing this by hand mix until your arm gets tired. If you’re using a mixer let it go for like a minute. Just the amount of time to check @MementoMoriGoods on instagram and see if we posted anything new.
Pour this mixture into the crust and bake for 15-20 minutes. Refrigerate overnight to set it. I mean, you can eat it immediately but like Italian food it’ll be much better the next day.
Now, there is great debate on if you put meringue or whipped cream on top. I’m firmly pro-whipped cream because you can easily add booze.
For some quick whipped cream take 1 cup of heavy whipping cream and 1/4 cup of sugar (confectioners/powdered if you have it) and a splash or two of your favorite hooch. Rum is great and keeps with the tropical theme, Triple Sec adds a nice orange dash or Chambord if you want people to think you’re bougie. Whip until it turns into whipped cream. It’s just that easy.
